- In a medium mixing bowl, combine 1 cup of plain Greek yogurt, ½ cup of creamy peanut butter, 2-3 tablespoons of honey (or maple syrup), and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
- Gently fold in ½ cup of mini chocolate chips into the yogurt mixture, ensuring even distribution.
- Spoon the yogurt mixture into silicone mini muffin cups or onto a lined baking sheet, filling each about three-quarters full.
- Press a few extra mini chocolate chips on top of each portion for additional garnish.
- Place the filled molds or baking sheet in the freezer and allow them to freeze for at least 2 hours, or until firm.
- Once frozen, remove the bites from the molds or sheet and let them sit at room temperature for 1-2 minutes before serving.
