Step-by-Step Instructions
  1. Rinse 1 cup of sushi rice under cold water until the water runs clear, then combine with 1.5 cups of water in a medium saucepan. Bring to a boil, then reduce heat and simmer for 18-20 minutes until water is absorbed. Fluff and set aside.
  2. While rice is warm, transfer to a large mixing bowl. Stir together 3 tablespoons of rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt until dissolved. Fold mixture into rice and cool to room temperature.
  3. Slice 1 cucumber into thin strips and halve 1 ripe avocado. Scoop out flesh and dice into bite-sized pieces.
  4. In individual serving bowls, layer 1 cup of seasoned sushi rice. Arrange cucumber strips and avocado pieces on top, then add chosen protein.
  5. Mix 2 tablespoons of soy sauce with sriracha in a small bowl. Drizzle sauce over each bowl and enjoy!
