  • 1 teaspoon Ground Ginger Fresh ginger can elevate the flavor even further.
  • 1/4 cup Honey Maple syrup is a tasty substitute.
  • 1/2 teaspoon Red Pepper Flakes Adjust to your spice preference or leave it out.
  • 2 cloves Garlic Fresh minced garlic is a great alternative to powder.
For Thickeners and Consistency
  • 1 tablespoon Cornstarch Arrowroot powder works well too.
  • 2 tablespoons Water

Method
 

Step-by-Step Instructions
  1. Trim excess fat from the chicken thighs and place them in the bottom of your crock pot.
  2. In a mixing bowl, whisk together the light brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic.
  3. Pour the sauce mixture over the chicken thighs in the crock pot.
  4. Set your crock pot to cook on high for 4 hours or low for 6 hours.
  5. Carefully remove the cooked chicken from the crock pot and chop it into rough pieces.
  6. In a small bowl, combine cornstarch and water, stirring until completely dissolved.
  7. Stir the cornstarch mixture into the remaining sauce in the crock pot.
  8. Add the chopped chicken back into the crock pot and mix it well with the thickened sauce.
  9. Garnish with freshly chopped green onions and serve over fluffy cooked rice.
