- Trim excess fat from the chicken thighs and place them in the bottom of your crock pot.
- In a mixing bowl, whisk together the light brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and minced garlic.
- Pour the sauce mixture over the chicken thighs in the crock pot.
- Set your crock pot to cook on high for 4 hours or low for 6 hours.
- Carefully remove the cooked chicken from the crock pot and chop it into rough pieces.
- In a small bowl, combine cornstarch and water, stirring until completely dissolved.
- Stir the cornstarch mixture into the remaining sauce in the crock pot.
- Add the chopped chicken back into the crock pot and mix it well with the thickened sauce.
- Garnish with freshly chopped green onions and serve over fluffy cooked rice.
