Preparation Steps
  1. Prepare the apple filling by peeling, coring, and slicing the apples. Cook in a saucepan with butter, water, brown sugar, cinnamon, nutmeg, and lemon juice for 10 minutes.
  2. Make the crust by combining graham cracker crumbs, sugar, and cinnamon in a bowl. Add melted butter, mix, and press into a springform pan. Bake for 7-8 minutes.
  3. In a bowl, beat cream cheese, sugar, and vanilla until smooth. Mix in sour cream, then add eggs one at a time. Sift in cornstarch and mix gently.
  4. Prepare crumble topping by mixing oats, flour, brown sugar, cinnamon, and salt, then stir in melted butter.
  5. Assemble by pouring half of the cheesecake filling on the crust, adding apple filling, then the remaining cheesecake batter. Top with crumble.
  6. Bake at 300°F for about 60 minutes. Let cool in the oven for 1-2 hours and refrigerate for at least 5 hours before serving.
