Ingredients
  

For the Cake
  • 1 cup Sweet Baking German Chocolate Can substitute with semi-sweet chocolate
  • 1 cup Boiling Water
  • 1/2 cup Unsalted Butter Room temperature
  • 2 cups Granulated Sugar
  • 4 number Eggs (separated)
  • 1 teaspoon Vanilla Extract Use pure vanilla
  • 2 cups Cake Flour All-purpose flour can be used but cake flour is better
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Fine Sea Salt
  • 1 cup Buttermilk Can replace with milk mixed with vinegar or lemon juice
For the Coconut Pecan Frosting
  • 1 can Evaporated Milk No substitutes
  • 1 cup Shredded Coconut Sweetened or unsweetened based on preference
  • 1 cup Chopped Pecans Lightly toasted for enhanced flavor
  • 2 cups Powdered Sugar Adjust for desired consistency
  • 2 tablespoons Cocoa Powder Optional for chocolate frosting
  • 1/4 cup Heavy Cream Optional for chocolate frosting

Method
 

Steps
  1. Preheat your oven to 350°F (175°C).
  2. Grease the bottom and sides of the three prepared cake pans with unsalted butter or non-stick spray.
  3. Pour boiling water over the finely chopped sweet baking German chocolate in a mixing bowl and stir until smooth.
  4. Beat the unsalted butter and granulated sugar until light and fluffy, then add egg yolks and cooled chocolate.
  5. Beat egg whites until stiff peaks form and gently fold them into the batter.
  6. Evenly divide the batter among the prepared cake pans and bake for 25-30 minutes.
  7. Let the cakes cool in the pans for about 10 minutes, then invert onto wire racks to cool completely.
  8. For the frosting, combine evaporated milk, granulated sugar, and egg yolks in a saucepan and cook until thickened.
  9. Layer the cooled cake with frosting and decorate as desired.
