- Preheat your oven to 350°F (175°C).
- Grease the bottom and sides of the three prepared cake pans with unsalted butter or non-stick spray.
- Pour boiling water over the finely chopped sweet baking German chocolate in a mixing bowl and stir until smooth.
- Beat the unsalted butter and granulated sugar until light and fluffy, then add egg yolks and cooled chocolate.
- Beat egg whites until stiff peaks form and gently fold them into the batter.
- Evenly divide the batter among the prepared cake pans and bake for 25-30 minutes.
- Let the cakes cool in the pans for about 10 minutes, then invert onto wire racks to cool completely.
- For the frosting, combine evaporated milk, granulated sugar, and egg yolks in a saucepan and cook until thickened.
- Layer the cooled cake with frosting and decorate as desired.
