Step‑by‑Step Instructions for Crockpot Beef Stew
  1. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Toss beef stew meat in flour, then brown in batches for 4-5 minutes per side. Transfer to crockpot.
  2. In the same skillet, sauté carrots, potatoes, onion, and garlic for 3-4 minutes until onions are translucent. Pour over browned beef in crockpot.
  3. Add 4 cups beef broth, 2 tablespoons tomato paste, thyme, salt, and pepper to the crockpot. Stir well.
  4. Cover and cook on low for 8 hours until beef is tender.
  5. About 30 minutes before serving, stir in 1 cup of frozen peas. Adjust seasoning if needed.
  6. Ladle the stew into bowls and serve with bread or over mashed potatoes.
