- If using frozen corn, thaw it completely, drain excess liquid, and pat dry. For fresh corn, remove kernels and dry well.
- In a mixing bowl, combine sweet corn, flour, chili powder, smoked paprika, garlic powder, cumin, baking powder, and salt. Mix thoroughly, then add egg, lime juice, and zest. Stir to form a thick batter.
- In a deep frying pan, pour enough oil to cover the bottom by about an inch. Heat over medium-high heat until around 350°F (175°C).
- Carefully drop spoonfuls of batter into hot oil, shaping into small rounds. Fry for 2-3 minutes on one side until golden, then flip and cook for another 2-3 minutes.
