Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (230°C) and prepare a large baking sheet by lightly coating it with oil or nonstick spray.
  2. Combine Gruyere, extra sharp white cheddar, and Pecorino cheeses in a bowl; toss together and set aside.
  3. In a saucepan, combine heavy cream, minced garlic, fresh thyme, Dijon mustard, kosher salt, and black pepper; heat until boiling, then simmer for 2 minutes.
  4. Layer half of the sliced Yukon gold potatoes on the baking sheet, drizzle with half of the cream mixture, and sprinkle with half of the cheese mixture.
  5. Repeat with remaining potato slices, cream mixture, and top with remaining cheese.
  6. Cover with aluminum foil and bake for 20 minutes; remove foil and bake for another 20-25 minutes until golden brown.
  7. Let the dish rest for about 10 minutes before serving, and garnish with chopped chives.
