- Preheat your oven to 415°F (213°C) and line a baking dish with aluminum foil for easy cleanup.
- In a small bowl, combine baking powder, garlic powder, onion powder, kosher salt, black pepper, paprika, oregano, and thyme. Mix well.
- Pat the chicken thighs dry with paper towels and carefully pull back the skin while keeping it attached.
- Place the chicken thighs upside-down in the lined baking dish and sprinkle the seasoning mixture over the undersides.
- Flip the chicken thighs over to face skin-side up and fold the skin back into place, then sprinkle the remaining seasoning mixture over the exposed skin.
- Dot the tops with pieces of butter and bake for 40 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
- Remove from the oven and let rest for about 5 minutes before serving.
