Method
 

Step-by-Step Instructions
  1. Preheat your oven to 415°F (213°C) and line a baking dish with aluminum foil for easy cleanup.
  2. In a small bowl, combine baking powder, garlic powder, onion powder, kosher salt, black pepper, paprika, oregano, and thyme. Mix well.
  3. Pat the chicken thighs dry with paper towels and carefully pull back the skin while keeping it attached.
  4. Place the chicken thighs upside-down in the lined baking dish and sprinkle the seasoning mixture over the undersides.
  5. Flip the chicken thighs over to face skin-side up and fold the skin back into place, then sprinkle the remaining seasoning mixture over the exposed skin.
  6. Dot the tops with pieces of butter and bake for 40 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let rest for about 5 minutes before serving.
