Steps
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Wash and trim zucchini, then slice into ½-inch thick spears.
  3. In a bowl, toss zucchini with olive oil, garlic powder, salt, and black pepper.
  4. In a separate bowl, mix panko breadcrumbs with Italian seasoning and optional cheese.
  5. Dredge each zucchini spear in the panko mixture, ensuring it's fully coated.
  6. Place the coated zucchini fries in a single layer in the air fryer. Cook for 10-15 minutes, flipping halfway.
