- Preheat your oven to 450°F (232°C). Line your baking sheet with parchment paper or lightly grease it.
- In a skillet over medium-high heat, cook 1 pound of lean ground beef until browned, about 5-7 minutes. Drain grease, add taco seasoning and ¾ cup of red enchilada sauce, and simmer for 2-3 minutes.
- Wrap 10 corn tortillas in damp paper towels and microwave for 30-60 seconds until pliable.
- Lightly brush one side of each tortilla with 1 tablespoon of olive oil. Place oiled side down on a baking sheet, fill with beef mixture and sprinkle with 2½ cups of cheese, then fold.
- Bake the tacos for about 16 minutes or until crispy and golden brown.
- Allow to cool on the sheet for about 3 minutes before serving.
