  • 1 can Canned Black Beans if using dried beans, soak them in advance
  • 1 can Canned Corn swap with frozen corn for a fresher taste
  • 1 can Canned Rotel Tomatoes with Green Chiles substitute with diced tomatoes and jalapeños if needed
  • 8 ounces Cream Cheese lighten up with heavy cream or half-and-half

Step-by-Step Instructions
  1. Place thawed chicken breasts in the bottom of your Crock Pot.
  2. Sprinkle equal parts taco seasoning and ranch seasoning evenly over the chicken breasts.
  3. Pour canned black beans, corn, and Rotel tomatoes directly on top of the seasoned chicken.
  4. Cut the cream cheese into cubes and layer them over the other ingredients.
  5. Cover the Crock Pot and set it to cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. Once cooking is complete, remove the chicken breasts, shred them and return to the pot.
  7. Check the thickness of your chili and stir in chicken broth or water if needed.
