  • 2 cups White Beans or cannellini or navy beans
  • 4 cups Chicken Broth low-sodium recommended
  • 1 cup Corn Kernels frozen or canned
  • 1 can Diced Green Chilies fresh jalapeños for more spice
For Seasoning
  • 1 teaspoon Ground Cumin or smoked paprika
  • 1 teaspoon Garlic Powder or fresh garlic
  • to taste Salt
  • to taste Pepper
For Creaminess
  • 8 ounces Cream Cheese can use Greek yogurt or sour cream

Step-by-Step Instructions
  1. Begin by placing the chicken breasts at the bottom of your crockpot. Add the white beans, chicken broth, corn kernels, and diced green chilies.
  2. Sprinkle ground cumin, garlic powder, salt, and pepper over the ingredients, then stir to blend seasonings.
  3. Cover with lid, and set to cook on low for 6-8 hours.
  4. After cooking, shred the chicken in the pot using two forks.
  5. Add softened cream cheese and stir until melted and blended.
  6. Ladle the chili into bowls and serve hot with your favorite toppings.
