  • 1 teaspoon Chili powder Adjust to desired spice level.
For the Finish
  • 1 cup Low-sodium chicken broth Alternatives include dry white wine, apple juice, or water.
  • 1/4 cup Chopped fresh parsley Can substitute with cilantro or basil.

Step-by-Step Instructions
  1. Prepare the chicken by cutting it into 1-inch pieces and seasoning with salt and pepper.
  2. Mix garlic powder, onion powder, dried thyme, dried rosemary, paprika, and chili powder in a bowl. Sprinkle half over the chicken.
  3. Sauté the seasoned chicken in heated olive oil for 6 to 8 minutes until browned and cooked through.
  4. In the same skillet, add remaining olive oil and sauté chopped yellow onion for about 2 minutes.
  5. Add broccoli, zucchini, and bell peppers to the skillet, season with remaining spice mix, and cook for 4 to 6 minutes.
  6. Pour in chicken broth, stir, and allow to simmer for about 2 minutes.
  7. Return the chicken to the skillet, stir to combine, and heat through for another minute.
  8. Serve the dish garnished with chopped parsley.
