  3. Add the eggs one at a time, mixing well after each. Stir in the mashed bananas and crushed pineapple until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Fold the dry ingredients into the wet ingredients until just combined. Avoid over-mixing.
  6. Gently fold in the shredded coconut until evenly distributed.
