  • 1 cup dairy-free yogurt plain, unsweetened variety
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1 teaspoon coriander
For Garnishing
  • 1 cup cilantro fresh

Step-by-Step Instructions
  1. Thinly slice red onions and toss them in a bowl with fresh lime juice, red wine vinegar, maple syrup, salt, and chopped cilantro. Marinate in the fridge for at least 15 minutes.
  2. Preheat the oven to 425°F (220°C). Pat dry chickpeas, toss with olive oil and salt, spread on a baking sheet, and roast for 20 minutes.
  3. Prepare cauliflower by cutting into florets, toss with olive oil and seasonings, and roast alongside chickpeas for a total of 30-35 minutes until golden.
  4. Blend chipotle peppers with dairy-free yogurt, lime juice, and seasonings until smooth. Adjust consistency and taste.
  5. Assemble wraps by spreading sauce on pita, adding lettuce, roasted chickpeas, cauliflower, and pickled onions. Wrap and serve immediately.
