Step-by-Step Instructions
  1. In a large bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly and let it rest for 5 minutes.
  2. Wet your hands to prevent sticking, then shape the mixture into elongated oval patties, making about 10-12 kofta in total.
  3. Preheat your grill over medium-high heat, brushing it lightly with olive oil.
  4. Place the kofta onto the heated grill, cooking for 5-7 minutes on each side until golden brown and reaching an internal temperature of 75°C (165°F).
  5. While grilling, mix plain yogurt with lemon juice and a pinch of salt in a bowl. Optionally add minced garlic.
  6. Serve the cooked kofta hot alongside the garlic yogurt sauce, pairing with pita, salad, or tabbouleh.
