- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté for 3-5 minutes until translucent.
- Add the lean ground beef and cook for 6-8 minutes, breaking it up until there’s no pink. Drain excess fat.
- In a large mixing bowl, combine the beef mixture with uncooked rice, beef broth, cream of mushroom soup, salt, and pepper. Stir thoroughly for about 2 minutes.
- Lightly grease a 9x13-inch baking dish and pour the mixture into it, spreading evenly.
- Sprinkle shredded cheddar cheese generously over the top.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let the casserole sit for about 5 minutes. Garnish with fresh parsley if desired.
