Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté for 3-5 minutes until translucent.
  3. Add the lean ground beef and cook for 6-8 minutes, breaking it up until there’s no pink. Drain excess fat.
  4. In a large mixing bowl, combine the beef mixture with uncooked rice, beef broth, cream of mushroom soup, salt, and pepper. Stir thoroughly for about 2 minutes.
  5. Lightly grease a 9x13-inch baking dish and pour the mixture into it, spreading evenly.
  6. Sprinkle shredded cheddar cheese generously over the top.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes.
  8. After 25 minutes, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Let the casserole sit for about 5 minutes. Garnish with fresh parsley if desired.
