Ingredients
  

For the Chicken and Rice
  • 2 tablespoons Extra Virgin Olive Oil Can substitute with butter.
  • 1 medium Yellow Onion Diced.
  • 1 pound Boneless Skinless Chicken Breasts Cut into bite-sized pieces.
  • 2 cloves Garlic Minced.
  • to taste Kosher Salt
  • to taste Ground Pepper
  • 1 cup Extra Long Grain White Rice
  • 2 cups Low-Sodium Chicken Broth
For the Vegetables and Cheese
  • 2 cups Broccoli Florets
  • 1 cup Shredded Extra Sharp Cheddar Cheese

Method
 

Cooking Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent and fragrant.
  2. Season the chicken with salt and pepper, add to the skillet, and increase the heat to medium-high. Cook for about 5 minutes, then stir in garlic for another minute.
  3. Push chicken to one side of the skillet, add 1 cup of rice, and sauté for 2 minutes.
  4. Pour in 2 cups of chicken broth, bring to boil, cover, and let simmer for 12 minutes.
  5. After 12 minutes, add broccoli florets, stir, and cook for another 8 minutes.
  6. Remove from heat, stir in half of the cheese, then top with the remaining cheese and let sit for 1-2 minutes.
