- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent and fragrant.
- Season the chicken with salt and pepper, add to the skillet, and increase the heat to medium-high. Cook for about 5 minutes, then stir in garlic for another minute.
- Push chicken to one side of the skillet, add 1 cup of rice, and sauté for 2 minutes.
- Pour in 2 cups of chicken broth, bring to boil, cover, and let simmer for 12 minutes.
- After 12 minutes, add broccoli florets, stir, and cook for another 8 minutes.
- Remove from heat, stir in half of the cheese, then top with the remaining cheese and let sit for 1-2 minutes.
