- Preheat your oven to 350°F. Wash and dry the large baking potatoes, cut each in half lengthwise and then slice into three wedges, creating about 18 pieces.
- In a large pot, heat about 2 inches of vegetable oil to 350°F over medium-high heat. Fry the potato wedges for 4 to 5 minutes or until golden brown.
- Remove fried wedges with a slotted spoon and let them drain on a paper towel-lined tray. Season hot wedges with kosher salt and black pepper.
- Sprinkle shredded cheddar cheese over the seasoned wedges and add half of the crumbled bacon on top.
- Bake in the preheated oven for 15 minutes until the cheese is melted. Then sprinkle the remaining bacon and bake for an additional 5 minutes.
- Let the wedges sit for a couple of minutes before serving. Enjoy hot with your favorite dips.
