Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F. Wash and dry the large baking potatoes, cut each in half lengthwise and then slice into three wedges, creating about 18 pieces.
  2. In a large pot, heat about 2 inches of vegetable oil to 350°F over medium-high heat. Fry the potato wedges for 4 to 5 minutes or until golden brown.
  3. Remove fried wedges with a slotted spoon and let them drain on a paper towel-lined tray. Season hot wedges with kosher salt and black pepper.
  4. Sprinkle shredded cheddar cheese over the seasoned wedges and add half of the crumbled bacon on top.
  5. Bake in the preheated oven for 15 minutes until the cheese is melted. Then sprinkle the remaining bacon and bake for an additional 5 minutes.
