For the Chicken
  • 1 pound Chicken Thighs Can substitute with chicken breasts
For Serving
  • 4 cups Steamed Jasmine Rice
  • 2 cups Stir-Fried Vegetables

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Gather ingredients and prepare the marinade.

  2. In a mixing bowl, combine all marinade ingredients. Whisk until smooth.

  3. Marinate chicken thighs with half of the marinade in a resealable bag. Refrigerate for at least 2 hours or overnight.

  4. Remove chicken from refrigerator and let it sit at room temperature for 30 minutes. Line a baking sheet with foil and place a wire rack on top.

  5. Arrange chicken on the baking sheet and bake for 25-30 minutes, until cooked through and caramelized.

  6. Simmer the reserved marinade in a saucepan for about 10 minutes until it thickens.

  7. Brush the chicken with the thickened marinade, set oven to broil and broil for 2-3 minutes until caramelized.

  8. Let the chicken rest for 5 minutes, slice, and serve over rice or alongside vegetables.
