Method

Step-by-Step Instructions for Caramelised Potatoes
  1. Begin by ensuring your potatoes are fully cooked and cooled. Ideally, use small, waxy potatoes boiled the day before.
  2. In a large non-stick pan, melt 50 grams of butter over medium heat until bubbly and foamy.
  3. Gradually add 50 grams of sugar into the pan, stir gently, and watch it turn golden (about 3-5 minutes).
  4. Introduce the prepared potatoes into the pan, gently rolling them in the caramel to ensure they’re evenly coated.
  5. Allow the potatoes to cook for an additional 10-15 minutes, turning occasionally until they are golden and tender.
  6. Serve warm directly from the pan or transfer to a platter, drizzling any remaining caramel over them.
