Method
 

Step-by-Step Instructions
  1. In a large bowl, combine shredded chicken, buffalo sauce, and mozzarella cheese until fully coated.
  2. Shape portions of the chicken mixture into about 3-inch long sticks and place on a parchment-lined baking sheet.
  3. Freeze the baking sheet for at least 30 minutes to firm up the sticks.
  4. Prepare a breading station with bowls of flour, beaten eggs, and seasoned panko breadcrumbs.
  5. Coat each frozen stick in flour, dip in eggs, and roll in breadcrumbs, pressing gently.
  6. Heat oil in a frying pan to around 350°F and drop in a few breadcrumbs to test the temperature.
  7. Fry the breaded sticks in batches for 2-4 minutes on each side until golden brown.
  8. Transfer the fried sticks to paper towels to drain excess oil before serving.
