- In a large bowl, combine shredded chicken, buffalo sauce, and mozzarella cheese until fully coated.
- Shape portions of the chicken mixture into about 3-inch long sticks and place on a parchment-lined baking sheet.
- Freeze the baking sheet for at least 30 minutes to firm up the sticks.
- Prepare a breading station with bowls of flour, beaten eggs, and seasoned panko breadcrumbs.
- Coat each frozen stick in flour, dip in eggs, and roll in breadcrumbs, pressing gently.
- Heat oil in a frying pan to around 350°F and drop in a few breadcrumbs to test the temperature.
- Fry the breaded sticks in batches for 2-4 minutes on each side until golden brown.
- Transfer the fried sticks to paper towels to drain excess oil before serving.
