  • 1 tablespoon Thyme Fresh or 1 tsp dried thyme
  • 1/4 teaspoon Cayenne Pepper Optional, can be replaced with paprika

Step-by-Step Instructions
  1. In a large mixing bowl, combine olive oil, soy sauce, minced garlic, fresh thyme, smoked paprika, black pepper, salt, lemon juice, and cayenne pepper. Whisk until smooth.
  2. Add the chicken thighs to the marinade and ensure they are thoroughly coated. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat your grill to medium-high heat (400°F or 200°C) about 15 minutes before grilling.
  4. Remove chicken from marinade, discard the marinade. Grill skin-side down for 6-8 minutes, then flip and grill for another 6-8 minutes until the internal temperature reaches 165°F (75°C).
  5. Remove from grill and let rest for 5 minutes before serving.
