- In a heat-safe bowl, sprinkle 2 tablespoons of plain gelatin powder over 1 cup of cold water. Allow it to sit undisturbed for about 5 minutes.
- Pour 1 cup of your chosen sugar-free fruit juice into a small pot and gently heat it over low to medium heat for about 3–5 minutes.
- Carefully add the bloomed gelatin mixture to the pot and whisk vigorously for about 2–3 minutes until fully dissolved.
- Pour the gelatin mixture into silicone molds or small cups, filling each one evenly and refrigerate for about 3 hours.
- Once set, carefully remove the gelatin from the molds and serve, optionally garnished with fresh fruit or Greek yogurt.
